Hello everyone! I have been researching for more information about Win10 PE and creating custom recovery environments like Gandalf and Medicat. As far as Googling is concerned I have not found much reliable or current info about the Windows PE other than how to make a bootable USB with it.

Does anyone know any good resources that I can read or watch to learn more about Win PE and more specifically being able to make my own custom environment on it etc.

Thank you all for your time!

I would recommend you to start here:

http://mistyprojects...ocs/readme.html

Once you will have the base knowledge, of both the architecture and of the most used builders (Winbuilder and PEbakery) and successfully built a few working builds of that project, you should be ready for making modifications to it (which remains a good, easy base) or to use more complex projects like WIN10PE, customizing it or create your own one.

Gandalf and Medicat seemed to based on Winbuilder projects. The link Wonko pointed to is a good start.
