I'm interested in some form of office, eg word and excel in winPE for an offline examination type scenario, where access to a spreadsheet, word processor, saving a file to the desktop and a printer is required. If you had success with this let me know, however I'm thinking its quite a challenging task, and would involve finding out where the place the system files + registry entries etc.

Try LibreOffice Portable: http://portableapps....office_portable dowload: 115 MB (NOT TESTED)
Install it on a folder on your internal HD or USB stick, boot from your WinPE find that folder and run it from there, maybe you are lucky. If not you need to add dependencies.
EDIT: Downloaded, installed on a folder on D:\ LibreOfficePortable 403 MB (selected option Delete other Languages, This keeps only english and the language selected during install), Launched it from D:\LibreOfficePortable\LibreOfficePortable.exe from Win7x64 SP-1 OS, it opened fine.
Then booted MistyPE build from 10x86 & 7SP1x64 sources, tried to run same file with no luck, it DO NOT run, not even a single message about a lack of something.

Once upon a time (for .xls and .doc) I used Spread32 and Atlantis, but the Office Viewers were added alright to PE's, JFYI:

(Mini-) Office 97 works, I have been using this for 20 years, both in normal Windows and in PE. I have Excel open 95% of the time, Word 10% of the time. Does everything I need, normally only print to PDF (not sure that works in PE).
These are the files you need (example for Dutch):
Excel.exe - EXCEL8.OLB - launch.ahk - [Username].xlb - MSO7NLD.DLL
MSO97.DLL - MSOC.DLL - MSROUTE.DL - Normal.dot - OSAINTL.DLL
SCANLOAD.DLL - WINWORD.EXE - WINWORD8.SRG - wordlaunch.ahk
WWINTL32.DLL - XL8409.DLL - XL8413.DLL - XLCALL32.DLL - XLINTL32.DLL
17,5mb total. "Launch.ahk" is a simple program that click away the VBA error
Like I said, has been working perfectly for me, but to be honest: I have never been able to convince others to use this setup :-)
EDIT: Aah, now I see you were talking about "Examination", not sure if Office 97 is appropriate then.
