Hello - sorry if this is a repeat question, but since the isostick acts as a boot device, how do switch between iso's -- is the iso_filename.txt file that has a sort of "default" iso to use?

iso_filename.txt specifies which ISO to put in the isostick CDROM, which is available at all times (OS or boot time).
For changing the ISO at boot time, you can use isosel (pictured here: http://isostick.com/...2/09/isosel.png ).

In short, every other time you boot from isostick's CDROM you will be booting into isosel (with some caveats, see FAQ). From there you can pick which ISO to load. By default it will select the ISO you have already loaded, and it will automatically choose that ISO if you do nothing for 15 seconds. That way if the machine is unattended it will behave as though you had left the same "disc" in the drive.
Note that isosel does not store its choice in iso_filename.txt, instead it stores it in a separate non-volatile memory inside isostick. This is done so you do not need it in read/write mode when using isosel. Changing iso_filename.txt or saving it without making any changes will switch back to the ISO specified in iso_filename.txt.
