So, all new with this UEFI vs MBR is about SecureBoot.
While keeping the option on in bios, how do you install the os?

What are the differences between the two recommended partition schemes?

No, it's about BIOS contrary to UEFI firmware.
MBR and GPT is another case. GPT supports disks greater 2 TB.
Yes, windows defaults UEFI with GPT.

Boot from the installation media and follow the gui.

What about using a UEFI virtual machine, e.g. VMware Player?

Recovery Winre.wim at a additional partition, or inside windows partition.
And a custom Recovery partition. If you like to use this, create a partition.
